The Perfect Vegan, Gluten-free Cookie Recipe

I love to bake. Mostly because I love to eat baked goods.

Baking without cane sugar, eggs, butter, milk and wheat is quite the adventure. It can often be a treacherous experience of bad texture and clumpy gooey messes.

But occasionally, after enough trial and error, something magnificent can arise.

This cookie, in my humble opinion, exemplifies that glorious experience of vegan and gluten-free baking victory! Soft, chewy, nutty, caramely sweet and satisfying.

I love coconut and chocolate, so that is the predominant flavor of this cookie, but I think that you could easily use this recipe as a template for other varieties, such as cranberry and pecan, macadamia nut and white chocolate, almonds and raisins, oatmeal, on and on.

 The Perfectly Tasty Healthy Cookie

1 1/2 cups of gluten-free oat bran

1 cup of gluten-free all-purpose flour (I use Pamela’s Artisan’s Flour Blend)

1/4 cup of ground golden flaxseed

3/4 cup of finely desicated unsweetened coconut

1 cup of organic coconut sugar

1 teaspoon of baking soda

1 1/2 teaspoons of xanthan gum

1/2 teaspoon of ground cinnamon

1/4 teaspoon of fine grain sea salt

3/4 cup plus of melted coconut oil

2 tablespoons of almond oil

6 tablespoons of unsweetened organic applesauce

1 teaspoon of vanilla extract

1 cup of vegan chocolate chips

Preheat oven to 325.

Mix dry ingredients well. In a separate bowl, whisk together wet ingredients. Fold dry and wet together, adding the chocolate chips last.

The dough might feel a little oily if you decide to hand roll the cookies, but I assure you, once baked, it will be just right.

Spoon out large dollops of cookie dough onto baking sheets and then flatten slightly with the back of the spoon. These cookies do not spread or grow much, so as you put them on the sheet, so shall they look once baked.

Bake for 13-15 minutes.

Allow to cool for a few minutes on the sheet, before placing on wire cooling racks.

  1. So excited for these cookies. Seriously.Sometimes vegan or gf baked goods get to be impossible. These look amazing! Have a wonderful weekend! Owen (my now FOUR year old and I,.now 31) get to celebrate our birthdays with a fun bbq and much time spent at the waterpark (the big surprise).
